Summer Peach (or any fruit) Yogurt Cake

Yield: 1 7” snacking cake

Ingredients :

125g 85AP

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon Celtic sea salt

150g whole milk yogurt

75g unrefined sugar

1 t pure vanilla extract

1 egg

40g avocado oil 

1 large peach (or 1 1/2 small peaches)


Preheat oven to 350°F


Line bottom of a 7-inch springform pan with parchment paper and butter pan generously. 


Slice peach into one-inch pieces.


In a large mixing bowl, whisk and/or sift together flour, baking powder, baking soda, and salt. Set aside. 


In a medium bowl whisk together yogurt, sugar, and vanilla extract. Set aside. 


Crack an egg into a small bowl and whisk in oil until fully mixed and beginning to emulsify. Add to yogurt mixture. Whisk together and then pour into dry mixture. Whisk to combine then using a spatula, fold in the peaches. Pour batter into prepared pan and place in preheated oven for 35 minutes or until golden brown and produces a clean toothpick test.


Place on cooling rack.
